Ingredients:

60 gram butter

1/3 cup castor sugar

1 egg

2 cups flour

2 teaspoons baking powder

1/4 cup mashed banana

Caramel:

40 gram butter

1/4 cup brown sugar

Method:

Beat butter and sugar in small bowl with electric mixer until light and fluffy, add egg, beat until combined. Stir in flour, baking powder and banana. Mix to a firm dough, cover and refrigerate for 30 minutes.

Roll half of the dough between sheets of greaseproof paper. Spread evenly with half the caramel, roll up firmly from a long side. Repeat with remaining dough and caramel. Wrap rolls in foil, refrigerate for 30 minutes. Cut rolls into 5 mm slices, place about 2 cm apart onto baking covered oven trays. Bake in moderate oven for about 15 minutes or until light golden brown. Cool and serve.

Caramel: Beat butter with wooden spoon until smooth. Add sugar beat until combined.
