Ingredients:

400 gram raw mango cubes

400 gram sugar

1/4 teaspoon salt

1/4 teaspoon chilli powder

1/4 teaspoon Kalongi

100 ml water

2 tablespoons white vinegar

Three cloves of garlic

One inch piece of ginger

50 grams sultanas

5-6 dried dates, thinly sliced

Method:

Place the mangoes in a pan, add the water, salt, chilli powder, and kalongi. Cook for about 15 to 20 minutes. Then add the vinegar, garlic and ginger. Cook for another ten minutes. Then add the sultanas, dates and sugar. Cook till sugar has dissolved, and then when the chutney has thickened, take off heat. When slightly cool, pour into clean glass bottles.
